This salmon is moist delicious and full of flavor. It is perfect for the Feast of Saint Andrew.

Today is the Feast of Saint Andrew. He was born in Bethsaida on the Sea of Galilee. He was Simon Peters brother and was in the boat when Jesus preached to the multitudes. When Andrew went along the streets of Galilee speaking the good news he soon became a martyr. He was crucified like Christ but was bound and not nailed. It was in the shape of an X called a saltier. That X shape is now commonly referred to as Saint Andrews Cross.

Saint Andrew is the patron saint of Fisherman and Singers. In honor of his feast day I made Barbecue Salmon.

INGREDIENTS:

1/4 cup brown sugar

1/4 cup smoked paprika

3 tablespoons salt

3 tablespoons black pepper

2 teaspoons garlic powder

2 teaspoons onion powder

4 salmon filets

DIRECTIONS:

Preheat oven to 375 degrees.
In a bowl whisk together the brown sugar, paprika, salt pepper, garlic and onion.  Liberally sprinkle rub over salmon and allow to sit for 10 minutes.
Place fish on a baking sheet lined with foil. Bake in a preheated oven for 10 minutes or until the salmon is cooked through.

Note if you are going to freeze this, freeze in the ziplock bag. When ready to prepare thaw the salmon and preheat the oven to 375 Bake in a foil lined baking sheet until cooked through.
