This week begins Lent. So the first on my Fridays list of things to make is my take on this homey comforting favorite.

Who doesn’t love a sloppy Joe?

I replaced the hamburger meat with Lentils and it is very satisfying without the meat. You can make a big pot of lentils and replace them in so many dishes to make them meatless and still stay with the Meatless on Friday requirement.

I cooked a whole bag of brown lentils and used some for this recipe. I still had 4 cups so I stored them in the freezer to make other meatless things while we are on this journey of Lent.

LENTIL SLOPPY JOES

INGREDIENTS:

2 tablespoons olive oil
1 small yellow onion diced
1 red bell pepper diced
1 1/2 cup of cooked brown lentils
1 1/2 tablespoons chili powder
2 teaspoons paprika
1 1.2 teaspoons cumin
1 teaspoon mustard powder
1 1/2 cups ketchup
2 tablespoons brown sugar
6-8 pretzel rolls

DIRECTIONS:

In a skillet over medium heat add oil, onion and bell pepper. Cook for 5-10 minutes or until onions are soft. add lentils, chili powder, paprika, cumin and mustard powder. Mix to combine. Add Ketchup and brown sugar. Mix to combine and allow to cook for 10 minutes. Spoon mixture over warm toasty buns.
