This is a very simple apple butter recipe that can be made while you are sleeping. This can be used on biscuits and crackers or just about anything.

Its that time of year when apples are in season. I am not sure when its officially fall. The leaves are still on my trees but the temperature is not as oppressively hot as it has been. I really like fall. Its all about cooler weather, sweaters, campfires, pumpkins and apple cider. Its also about apple butter. Back in the day, apple butter was cooked and stirred in a pot for hours and hours.Now with our trusty slow cooker we can just let something simmer while we do other things. I consider my slow cooker and my cast iron skillet the work horses of my kitchen. I do love to give this apple butter away as gifts during the Advent season.

SLOW COOKER APPLE BUTTER

INGREDIENTS:

5 pounds apples about 20 (I use a combination of Fuji and gala)

3 cups apple juice

2 cups granulated sugar

2 cups brown sugar

2 teaspoons apple pie spice

DIRECTIONS:
Peel and core apples. Cut into chunks and place in sow cooker. Add juice, sugars and apple pie spice. Mix to combine. Place slow cooker on low and cook for 8 hours. Take lid off cooker and set to high and cook another 2 hours. (I do this overnight usually) Ladle hot apple butter into clean hot jars and wipe rim. Allow at least 1/4 inch head space. Place lid on top and allow to process for 15 minutes in a hot water bath.

Remove from pot and set on a towel to allow to cool. Can will make a popping sound when the ring is sealed. Any jar not sealed should be used right away and stored in the fridge.
